Come and learn how to make your own pasta filata cheeses: Mozzarella and Burrata made with pasteurized buffalo milk from Aveyron or raw cow milk from Tarn et Garonne.
A 3-hour private workshop at La Laiterie Toulousaine, followed by a cheese tasting session. Please note that our dairy will be privatized for this event.*
You will be able to take your own cheeses home – approximately 500g.
Due to limited space, we can only welcome up to 16 participants.

Learn how to make your own pasta filata mozzarella!
This workshop offers a unique opportunity to enter in a small dairy and discover the world of cheeses – including the famous mozzarella.
This workshop is considered difficult because it requires a lot of focus, technique and putting your hands into very hot water.
In terms of skill level, you won’t learn how to make the cheese from the milk – but you will get to experience the most fun part: the stretching. After the workshop, you will have access to the complete recipe, from milk to mozzarella.
Schedule:
The milk we use depends on what’s being produced at La Laiterie Toulousaine at the time. Generally, it will be pasteurized buffalo milk or raw cow’s milk – all sourced from farms in Occitanie.
- Once you’ve put on a suitable outfit and received a few instructions on safety precautions, you’ll be able to enter the dairy and get started.
- Then, you’ll start by making your own stracciatella (the heart of burrata). This will help you get familiar with the stretching technique.

The second step is to turn your stracciatella into a burrata. It’s a challenging process – but if you succeed, the feeling of accomplishment is pure joy. And you’ll get to share it with your loved ones that same evening.
- Then comes a more classic cheese: making your own mozzarella. And that, too, is an art form all its own!
- You will leave with approximately 500g of products: mozzarella, burrata, and plenty of happiness to share!
- After all these emotions and efforts, a pleasant moment awaits you – you’ll get to taste cheeses from our dairy, paired with wine/fruit juice and delicious artisanal bread.
On site, you’ll also be able to buy our urban cheeses – you’ll have a choice depending on the aging stage. You can also buy kits to make your own cheese at home!
