Description
Learn how to make and transform your own cheeses – your own fresh Tomme and Ricotta – using ewe, buffalo, or cow’s milk from Occitania!
This workshop is a unique opportunity to step into a unique urban dairy and discover the world of cheeses.
This workshop is rated as easy because it is accessible to everyone. You don’t need to be particularly handy or a skilled cook to succeed (unlike mozzarella!).
In terms of skill level, it’s a great starting point for learning how to make your own cheese: you will add rennet to the milk and mold your Tomme. After the workshop, you will have access to complete recipe sheets for these cheeses.
Schedule:
- After putting on appropriate clothing, you will enter and begin with the renneting step to make your fresh Tomme – a bit like the l’IGP Tome fraîche de l’Aubrac.
- While the milk is working (the coagulation phase), you’ll get some technical insights into the French and international cheesemaking industry. You’ll be able to ask all your questions. This is the time to learn more about all the major cheese families: soft, fresh, pressed, stretched-curd, and more.
- After molding your Tomme, you will begin making « brousse » – better known by its Italian name: Ricotta. This will be a moment of sharing around your creation, before moving on to the tasting!
- You will then be able to taste the good products from our urban dairy, paired with wine or fruit juice. When the ricotta starts to « brousse » (form curds), you will need to mold it and also make sure your Tomme has finished draining.
You will take your own creations home: a 500g Tomme, around 80g of ricotta, and plenty of happiness to share!

Need a different date? Feel free to contact me if none of the available dates work for you. The workshop date can be changed up to 8 days before the chosen date (see our GTC), as milk is a perishable product and requires advance planning.
Group size: Workshops are for 6 to 10 people.If fewer than 6 participants are booked, the workshop will be rescheduled.
