Do you want to learn how to make stretched‑curd cheeses? Mozzarella is the most iconic of them all.

Invented by the Italians, this cheese is made quickly, using the morning’s milk, the famous balls are ready in just a few hours. This process makes it possible to work and ferment the milk even in hot climates, where cheese preservation is more challenging.

During this training, you’ll explore two methods: fermentation‑based mozzarella (using starter cultures) and citric acid‑based mozzarella (unfortunately very common).

A one‑on‑one, immersive training course to help you understand stretched‑curd cheeses, including mozzarella.

8 hours of theory and hands‑on practice.

You’ll leave with your own creations.

This training course is fully tailored to your project and delivered on an individual basis. I adapt to your availability and your specific needs.

A lower-cost option allows you to join a production day at the dairy. You’ll follow the same training, but you’ll need to work around the dairy’s schedule. These sessions are usually run with pasteurised buffalo milk.

This one-day mozzarella training course will teach you the fundamentals of cheesemaking, with a focus on stretched-curd cheeses.

The training begins with milk preparation, and you’ll make two types of mozzarella: fermentation-based and citric acid-based. One is easier and quicker to make than the other.

At the end of the day, you’ll take home everything you’ve made – and possibly some mozzarella curd to keep in your fridge for a few days, so you can practise stretching at home.

The price quoted does not include raw materials. Depending on your project, we can work with buffalo or cow’s milk – raw, thermised, or pasteurised. The training fee will be adjusted accordingly.

The price covers training held at the urban dairy. Travel expenses will be added if the training takes place at your location.
